The Happy Plantstrong Food Log

Rip encourages all participants of the Engine 2 28-Day Challenge to keep a food log to track your progress. In addition to writing down what you eat for each meal and snacks in between, he suggests that you also track your daily activity and anything you observe about the way you feel.

Here’s a food log submission that Rip received this week that exemplifies plantstrong goodness:

  • Breakfast:  cucumber, tomato, avocado sandwich
  • Lunch: salad with citrus dressing and bread
  • Dinner:  potato and veggie stew
  • Snacks:  2 apricots, 1 banana, baby carrots, some nuts
  • Daily Activity: light walk
  • Daily Observation:  People speak about radiance in my face, change in the way I seem.  I feel good

    I love seeing what people are eating on a daily basis. I would love to see more of this!! To me, that’s the hardest part, just figuring out what to eat day in and day out…..just the usual stuff, not thinking about fixing big meals or special recipes……just “regular” eating!!

    Just want to thank you Rip for your plant strong lifestyle, I don’t like to call it a diet because it is so much more. Because of the improvements I have made in my own life and fitness being plant strong I am now enrolled in a Holistic Nutrition Consultant course in hopes of helping other to make this healthful lifestyle change.
