We really like this cookbook for a lot of reasons. There are a lot of easy recipes, that the entire family will love. Some of our favorites are: Butternut squash soup, quick queso, frittata, mushroom burgers, enchiladas, and garden chowder. We really like the variety, and Lindsay proves once again that being plant-strong does not have to be boring and it definitely does not have to be tasteless!
