Tasty (plant-strong) Thursday!

Each Thursday we are going to feature some tasty plant-strong recipes and plant-strong recipe resources to help you on your journey to becoming plant-strong!

Today we are talking about a cookbook filled with 175 oil free plant-strong recipes! “The Happy Herbivore Cookbook” We also are doing a giveaway on Rip (and the E2 team) facebook page, check out the page and enter to win here.

We really like this cookbook for a lot of reasons. There are a lot of easy recipes, that the entire family will love. Some of our favorites are: Butternut squash soup, quick queso, frittata, mushroom burgers, enchiladas, and garden chowder. We really like the variety, and Lindsay proves once again that being plant-strong does not have to be boring and it definitely does not have to be tasteless!

Here are some of Lindsay’s recipe’s, try one out, tell us what you think, and make it a tasty Thursday!
