09 Aug “My Immersion story” – Sue

We have been asking Engine 2 Immersion graduates about their immersion story, first up is a graduate from our 2nd Immersion in Austin, TX. Read Sue’s story, and join us for one of the next immersions!

“The immersion was not like anything I expected. I thought we would be in a classroom setting in a hotel conference hall, sitting in uncomfortable chairs, taking notes all day. Little did I know how the Esselstyns and their infectious enthusiasm would take over my life so much for the good. I’m always up for an adventure, so the only thing I feared was the plane ride. And then when we arrived, I fell in love with everything there, the people, the place, the view, everything. I was so moved by the stories of each of the immersionites, and proud of all of us by the time we left. Rip, Jeff, and Natala were the biggest influences there, but everyone had a hand in this life change. Just last night, we had a huge family party and my plant strong dishes were the first things to be gone. It’s taken a while, but even my stubborn husband is coming around, and he was in worse health than I was, so hopefully he’ll benefit from this experience as well. I would return to another immersion in a heartbeat if I could, just to be a cheerleader for the program. There are 2 months left in the year that I dedicated to the E2 program, and for a while I thought that I might introduce some of the things I’d been missing back into my diet (tuna sandwiches, ice cream, stadium hot dogs, etc) after that time was up, but there are so many plant strong substitutions for the things I thought I wanted, that when October rolls around, it’ll be just another day in my plant-strong life. Bye-bye C.R.A.P (calorie rich and processed)!” – Sue
