10 May Kristen’s Incredible Story (Plus a MBWM Giveaway!)

Early Feb 2013 I had just seen my doctor after a terrible health year in 2012 with 7 lung infections that sent my asthma off the charts and put me on steroids much of the year along with back to back antibiotics causing the fluora in my gut to be completely out of whack so everything I tried to eat came out FAST and OFTEN to the point I started avoiding eating at all which had its own health problems in slowing down metabolism and so much more. I went on probiotics to help myself in some way get control of my health but after my appt. in early Feb 2013, I came home in tears, so sad, feeling like a failure and wondering how to change my appearance, how I felt, everything when I could barely stay healthy long enough to do anything about it.

I happened (now I think it must have been fate) to hear from a friend at work about Forks Over Knives and watched it the night of 2/7/13 on Netflix – she also directed me to your site (Engine 2) for additional information – there was just no going back! I just knew this was real information that explained so much. It clicked and all the dots were connected. I switched the NEXT day (2/8/13), no hesitation, nothing – went full whole food plant based and it was so much easier then I thought. I actually LOVED all the food and explored the FOK and Happy Herbivore sites as early info for data and recipes. I bought cookbooks from your site and theirs and went from a woman hating to cook to a woman even after a long day at work dying to come home and make a delicious meal.
I am a divorced mother of 2 kids who I adore and for them, I also needed to change and to live to see their weddings and grandkids and so much more! I have noticed in the 63 days I have been doing this so much – asthma, GONE! Got sick once this year – MILD requiring no antibiotics and for the first time I had a swollen lymph node in my neck during the cold that I never had before – I know we all have them but for years I had no immune system because of how we ate growing up and how I ate as an adult not knowing all I know now. So to feel a lymph node swollen and knowing oh, this is how the body is supposed to fight disease and infection, was NEW and thrilling!

My skin was always pretty clear but it is absolutely baby soft these days – simply flawless in every part of my body and glowing! I had a slight improvement already in vision when I went for my yearly eye appt. and an enormous 16 pound loss in weight in just 63 days. My digestion issues resolved now with NO probiotics anymore and I truly can tell my body now knows it can hold on to the food for nutrition and burn off the excess. I am on no asthma medications any longer as well. I feel light and airy on a daily basis, sleep like a rock where before I was up tossing and turning every night and got very little sleep and rarely am I tired at work during the day anymore.

The transformation in just 63 days is amazing, absolutely astonishing. In June of this year I plan to have the doctor re-run my BW – they were never bad numbers before but always in the high normal range so I am curious how the numbers will compare to last August of 2012 in the height of steroids and medications and poor nutrition.

In the meantime, as a tool to stay motivated and really SEE the results, I am attaching a before and after pic from my day 5 early on start date to my day 63 mark which is today (4/11/13) – the difference is astonishing and my smile says it all as I looked so unhappy in the 1st before picture! Many said they are sure the pounds will keep dropping especially with my body re-learning to have a healthy metabolism but in the meantime to pay attention to my shape and take measurements as well as side by side pics – the pics really put it all in perspective for me today and I wanted to email you my small success story “in progress.”
You have opened my eyes to good health, the only healthy way to eat for LIFE and have given me invaluable tools through your movie and your continued work! Thank you for telling us as patients what many doctors will not – how to obtain fantastic health in the simplest way and see such dramatic results AND feel amazing in the process. This did not start, nor is it now, a “diet” – this is a true lifestyle change and anywhere I go, I speak with excitement about eating WFPB and all the wonderful things it has brought me! – Kristen

    I started E2 on Feb 11, 2012 and got rid of over a hundred pounds, higher than I would have liked BP and cholesterol. I have had one of the best years of my life but this winter I slacked a little and put on 5 pounds and let a little oil creep back into my life, its gone for good now and am back on track but need this book to increase my knowledge.

    I want this book so bad i can taste it! I watched forks over knives to keep me motivated on my 30 day juice fast, today is day 28! After that i watched the engine 2 documentary where you go to two peoples homes and help them cook plant based food! I love it! I am now addicted to your website and watched a lot of your videos, loved the toronto one where you and the other two guys danced! Very sexy! Lol i have soo much more to say but am writing from my phone, so its difficult. Suffice to say i am your new biggest fan, thank you so much fpr sharing your passion and enthusiasm with the world!     I love the plant based way of eating, and need more ideas of what to cook and eat. I have lost weight since last year (20 lbs.) and kept it off. I am trying to convince my Atkins diet friend that this is healthier. Perhaps the book will help. Henny.

    Kristen great job, and I’m sure you feel wonderful. I’ve been flip flopping on the plant based way of eating. It can be hard because you need to prepare, instead of reaching for the packaged food item.

    Congrats on the great transformation!

    I already eat a plant based, vegetarian style, but am yet to be convinced of the need to give up dairy and eggs, esp. fat-free dairy and egg whites, as Dr. Dean Ornish and some others say it’s ok to have them.

    Maybe MBWM has some new convincing arguments?

    My journey was similar only I had 10 years of fibromylsia and the last 3 years of weight gain. Had my gallbladder removed, multiple sinus infections and sick all the time. I cut gluten out of my diet and now only eat a plant based organic diet. I feel and look wonderful. The aches and pains are gone. Engine 2, Forks over knives to name a few were a great help in getting me where I am today.

    I would love to have a copy of this book. My parents, husband, and myself took on a plant based diet approximately 3 months ago. My dad has heart disease, high blood pressure, and diabetes. He is already off all medications except Insulin. He is doing GREAT!!!! My mom and husband have severe chronic sinusitis. Both are seeing marked improvement. I suffered from severe indigestion and acid reflux, which has resolved since about 2 weeks into the plant based diet. We would really use this book, as we are still newbies at this, it would help out so much.

    Awesome job. =) I would love to get a copy of the book because I am trying to get myself and my sons healthy, I am using nutrition to treat there adhd and autism. so far it is working, grade and behavior it much much better but having new recipes at hard would a great help. I can now outlasted my four year outside playing. A copy of your book would a great help on our way to medicine free, happy, healthy household.

    Way to go, Kristen! Glad you’re taking back your health and getting awesome results, the best of which is realizing how much better life FEELS when you eat right!

    I’d love to get a copy of “My Beef With Meat” so I can expand my go-to recipes for my family as we try to convert to a 100% WFPB diet. We sometimes default to less healthy options because I don’t have a big enough recipe base of favorites yet, and with a toddler in the house, it can be a challenge to convince him something is worth trying when I’ve run out of ideas. The teasers for the chocolate section in the book have definitely gotten my attention, too! My husband and I have both impressed our doctors with the weight we’ve already lost and my husband’s blood work (which was previously in the “high risk” zone) has improved enough that he’s able to use himself as an example of how diet can combat even a family history of heart disease despite the deeply ingrained idea his family has that “everyone ends up with high blood pressure/cholesterol when they get older, so medicine is the only way to fix it.” If we can make that final switch to being 100% WFPB by getting some more recipes in our hands and improving our health even more, it would make it more difficult for our other family members to disregard the benefits we’re seeing and might possibly entice them to give it a try. I’d love a copy of the book!

    I have been working on a plant based diet and juicing. Planning ahead my meals and prepping the night before really helps. My son has Aspergers and ADD; I make him green juice before school and he feels it is helping. We are weaning off all medications as school is ending for Summer and my hope is that a plant based/juicing diet will get both him and I off our medications.

    I really feel inspired by your story. All the health improvements and just feeling better! I’m 24 and have had fibromyalgia for 10 years already, the dr. currently thinks I have multiple sclerosis, which scares me. I suffer from chronic migraines, IBS, numbness and tingling in all my limbs, nerve pain, major depression and anxiety. I’m on 12 prescriptions which add their own side effects. All these things make it so hard for me to support myself. I’m 24, but the only people I can relate to are in their 70s. They understand all my health problems and my fears. I’m so afraid of living the rest of my life like I am now. Miserable. I can’t imagine my entire life like this and probably worse with my family’s medical history. All my aunts and uncles and both grandparents are type 2 diabetic. I have had 3 immediate family members with cancer. On both sides of my family are heart disease and strokes. My maternal grandfather had a heart attack at age 50 and needed a SIX-way bypass to save his life. EVERYONE on both sides of my family have high cholesterol and high B/p and are overweight. I want to change my life now. I’m so determined to be the change in myself and hopefully inspire my family. I will not give up. I have no support from my family or friends in my plan to become plant strong. I rely on online communities to keep me going and encourage me. I don’t have access to netflix to watch any of the food documentaries as I had in the past. I have the FOK book, but would really love more recipes and more knowledge.

    I would love to win your new book, because I love your first and can’t wait to see more! Being vegan is easy for me (5 years), gluten-free is the difficult part. I’m hoping you have some GF recipes in your new book.

    Have been eating plant strong just over a year. I feel great but have not lost the weight I would like. A new book could be added inspiration. All of the comments and stories are your site are very helpful.

    So, Dan and I have been on this life changing plan, (can’t call it a diet anymore) and Wow!! amazing…we both reached a point in Feb. of this year, where we were both over weight and miserable. We watched Forks over Knives and then Engine 2 on Net flix. As many times as I have tried diets, research other, poo pooed so many. All I did was say, ” Let’s try it” and we were hooked. Cleaned out our Kitchen, and I started chopping. It was crazy, all we kept saying, meal after meal, was OMG, this is sooo good, there is soo much food. I can’t believe this is a diet…and so on and so on. It is now the middle of May and we couldn’t be happier. Dan has lost 30lbs, without working out
    !! I have lost 15…increased my running and we both feel amazing. We have traveled a couple of times and I am honestly proud to say, we managed to pretty much stick to our meals and not waiver too much…we fit in a run each day and when Dan has traveled he has taken a cooler filled with healthy choices. This truely has been wonderful. I think the only thing we really have to work on, is finding other things to talk about with our friends. ( We tend to go on and on) Thank you for teaching us how to enjoy real food and chuck all the junk dragging us down. And yes, I would love to win the book.

    Boy would I love this book. I have been total vegetarian since 1985, but use a lot of processed foods. I would love to get away from them and go totally plant based.

    I’d love the book because so many of my friends ask me, why? As well as other questions like, where’s the protein and what exactly do you eat? I’ve already read the good reviews about the book and would love to red it on my own. Then, I’d loan it out!

    I would really love this book to kick start my path to better health. I fee like I start off on a food diet but always fall off. I saw forks over knives and really want to begin the plant base way of eating.
