05 Jun Grilled Zucchini & Avocado Panini's!!!

Here is my office mate, Adam Butler, of The Butler Brothers Ad Agency in East Austin preparing and then getting ready to chow down on a steaming hot grilled zucchini and avocado panini on whole grain hemp bread. Adam was one of my original Engine 2, plant-strong, pilot study guinea pigs and has been plant-determined and plant-healthy for two years and counting. He was one of four Engine 2’ers who were able to get their total cholesterol to 100 mg/dl or below…Wow!!!!…the equivalent of a rural Chinaman or a Papua Highlander from New Guinea. Adam lives and breathes this lifestyle and was overheard today saying that the answer to the health care crisis is NOT more legislation-it’s people learning to stop eating contaminated and disease promoting foods. I hear you loud and clear, Adam. You rock!!! Here’s an E2 shout out to my buddy, office mate, and Engine 2  rock-star, Adam Butler!!!

    This sandwich is FANTASTIC!!! My husband calls it the “Sushi Sandwich” because it has sushi flavors (avocado, soy, zucchini). I made them last night for dinner, and was CRAVING them for lunch. I can’t wait to make them again!
