Every Friday we end the week with some good news. Today we hear from Lori. Her story is incredible, we’ll let her take it from here!

I started to eat a whole foods, plant-based diet approximately 8 months ago due to being diagnosed with a very rare life-threatening condition.  Changing my diet was the last thing on my mind, but the doctors told me there wasn’t much else they could due for me (this was approximately one-month after diagnosis).  I tell people I did not come with open arms, I came kicking and screaming – mostly because I didn’t truly believe that changing my diet would help, but I had no other choice.  My results have been tremendous.  So much so, that my husband and son saw the changes in me and they wanted in on what I was doing.  My improved health has caught the attention of my specialists and GP.

In short, my son Reid is involved with his high school in partnership with the local fire department on a fire fighting program.  Reid thought he would give my diet a try for a while and see if he noticed a difference.  This is only after I was able to share your face book site with him.  He now works-out regularly, and sports quite a six-pack. You have become quite a roll-model for him, and for that I want to thank you very much.  I can’t think of a better person for him to want to be like.

This evening, I still had some beef roasts left in the freezer, and thought well it has been a long time since I cooked one, so I put one in the oven for dinner.  I could not stand the smell, but thought I would persevere because my family has been so patient with my “new way of eating”, and they would probably love it.  Well, when I served it, Reid took a couple of bites and said nothing, but left it on his plate.  I asked him if I had cooked it ok, and he said “yes”, but I just can’t eat it.  Funny, he is 16 years old and I never in a million years thought he would experience a change like this.  He actually has told all his friends, and some of them are now trying to make a change.

    What a great story! “Kicking and screaming” or not, it amazes me how Lori committed herself to a program she did not yet believe in. To me that speaks volumes about her strength of character. More importantly, though, is the positive effect she is having on those around her. From my experience though if you need a bit of extra motivation watch a video called “Meet your Meat”. It was after watching that five minute clip that I realized I’d made the best decision of my life.

    Wonderful story Lori! We live just up the road in Vernon and attended the Austin Immersion in September. No health problems, but we feel 10 years younger!

    When I was diagnosed almost one year ago, I had 7 specialists. This week I went to see my rheumatologist (the only specialist I have left), and was told “if my next 6-month checkup is as good as the one I had today, then I will be put on an annual recall”. I swear my heart almost jumped out of my chest with excitement!

    I am very thankful for Dr. Esselstein, Dr. McDougall, Dr. Barnard, & any other doctors involved in the China Study and ongoing research. However, I would not have been able to be as successful as I have been without the many wonderful recipes from Rip Esselstein, Mary McDougall, Lindsay Nixon (Happy Herbivore), Forks over Knives, and Colleen Patrick-Goudreau. I wish it was possible to meet these people and thank them personally.
