I started to eat a whole foods, plant-based diet approximately 8 months ago due to being diagnosed with a very rare life-threatening condition. Changing my diet was the last thing on my mind, but the doctors told me there wasn’t much else they could due for me (this was approximately one-month after diagnosis). I tell people I did not come with open arms, I came kicking and screaming – mostly because I didn’t truly believe that changing my diet would help, but I had no other choice. My results have been tremendous. So much so, that my husband and son saw the changes in me and they wanted in on what I was doing. My improved health has caught the attention of my specialists and GP.
In short, my son Reid is involved with his high school in partnership with the local fire department on a fire fighting program. Reid thought he would give my diet a try for a while and see if he noticed a difference. This is only after I was able to share your face book site with him. He now works-out regularly, and sports quite a six-pack. You have become quite a roll-model for him, and for that I want to thank you very much. I can’t think of a better person for him to want to be like.
This evening, I still had some beef roasts left in the freezer, and thought well it has been a long time since I cooked one, so I put one in the oven for dinner. I could not stand the smell, but thought I would persevere because my family has been so patient with my “new way of eating”, and they would probably love it. Well, when I served it, Reid took a couple of bites and said nothing, but left it on his plate. I asked him if I had cooked it ok, and he said “yes”, but I just can’t eat it. Funny, he is 16 years old and I never in a million years thought he would experience a change like this. He actually has told all his friends, and some of them are now trying to make a change.
