Foodie Friday: E2 Potlucks

In Austin, we host Engine 2 potlucks once a month. They are a fabulous way to meet other people on the Plant Strong journey, enjoy the adventure of trying new and different recipes, and share tips on everything from food preparation to favorite local restaurants. If you live outside of Austin, we encourage you to start your own Engine 2 community support group with regular potlucks or lunch meet-up groups.

This month, our friend and Austin-based singer-songwriter extraordinaire, Libby Kirkpatrick joined us. She shared a fabulous curried quinoa dish with kale and avocado, and lead us all in song after dinner. If you haven’t heard Libby’s music, you’ve been missing out!
