10 Nov Fast Food: Thanksgiving Recipes

You want simple, you want fast, you want to make your Thanksgiving hassle free. What do you do? We turned to the king of healthy fast food, Jeff Novick, RD to help us come up with some great, fast, inexpensive meals this Thanksgiving.

Fast Food Veg Loaf: 

We took Jeff’s recipe for burgers as our base. We doubled the recipe, added 2 more tbs of liquid and added poultry seasoning. Walla! Veg Loaf!

What we did: This worked for one loaf pan or 6 large muffin molds (we used a silicone muffin tray, worked out great!) – *This is Jeff’s recipe doubled:

Pre-heat oven to 350


Two Can Eden Foods Organic Kidney Beans, No Salt Added
1 Cup Cooked Brown Rice (short grain works the best)
1 Cup Regular Oats
4 TB plant-strong tomato sauce (we just used Pomi tomato puree)
add 2 TB more of tomato puree
(veg) Poultry seasoning spice. (we just covered the entire mixture)

Mix together  and then mash with a potato masher. You could also use a large fork, or your hands will work just fine!
In a loaf pan: spread a thin layer of tomato puree, then pack in your loaf mixture.
In a muffin mold: if you are using non stick or parchment paper liners, put enough veg loaf mixture to fill up each mold, pack it into each mold.
Cover the top with a thin layer of tomato puree (you can also use bbq sauce if you like).
Bake for 35-45 minutes.


We served this loaf with brussels sprouts and sweet potato mash. We use frozen vegetables for both.

Fast Food: Shepherds Pie: 

Mashed potatoes: The quick and easy way – boil cubed potatoes, when they are done, put them in a bowl and mash them up. Want to get fancy? Add a tiny unsweetened non-dairy milk and a little nutritional yeast.
Frozen or pre-cooked (low sodium) lentils (3 small bags or 2 packages)
Frozen spinach
Frozen vegetable mix (peas/carrots)
Veg. Poultry Seasoning
1/4 jar of tomato plant-strong tomato sauce
Pre-heat oven to 350
In a nonstick large baking dish layer the following:
1 layer tomato sauce
1 layer lentils
1 layer vegetable mix
1 layer spinach
Sprinkle poultry season over entire dish
1 layer of mashed potatoes
Bake for 30 minutes, covered. Use a parchment lined aluminum foil for best results.

We topped it with Happy Herbivore’s gravy recipe, but it is not necessary if you want to skip it.

Fast Food: Lasagna: 

Another great one from Jeff! 

Tomato Sauce
2 Boxes POMI Chopped Tomatoes
Fresh Garlic, Basil, Oregano

1 lb frozen chopped spinach
1/2 lb frozen mushrooms
1 lb frozen zucchini
1/2 lb frozen carrots
1/2 lb frozen onion, pepper mix
2 sweet potatoes baked

Mashed sweet potatoes and thin with warm water while veggies thaw and then mix thawed veggies in with the mashed sweet potato to make the filling

1/2 cup sauce on bottom of pan
1 layer whole grain noodles
1 1/2 cup sauce
1/2 sweet potato/veggie mix
1 layer noodles
1 1/2 cup sauce
1/2 sweet potato/veggie mix
1 layer noodles
1 1/2 cup sauce
sliced tomatoes

Bake covered for 45 minutes at 375


Jeff’s Longevity Soup: 

To make this more festive, we served it in a baked squash. You could also add frozen sweet potato to it if you wanted.

Preparation Time: 5 minutes
Cooking Time: 15 minutes
Servings: 4
6 cups water

1 15 ounce can diced tomatoes
1 15 ounce can crushed tomatoes
2 15 ounce cans beans (see hints below)
2 pounds frozen vegetables (see hints below)
1-2 cups cooked potatoes, grains, or pasta (see hints below)
Seasonings: 1) minced garlic, basil, oregano, hot pepper sauce
OR 2) minced garlic, grated ginger, smoked paprika, cumin, hot pepper sauce

Place all of the ingredients into a large pot and mix well. Bring to a boil and simmer for 15 minutes, until all vegetable are done.

Hints: Use any kind of beans that you like in this soup, either both the same kind or one can of each of 2 different kinds. (Jeff’s favorites are kidney and garbanzo.) Look for Eden Organic, No-Salt Added Beans. Also look for Pomi tomatoes in shelf-stable boxes. Frozen vegetables usually come in 1 pound bags. Look for California Blend (cauliflower, broccoli and carrots) or Italian Blend (zucchini, green beans, broccoli and red pepper). This is a good use for leftover cooked starches, such as potatoes, rice or pasta. Use one of the 2 seasoning suggestions for either an Italian-style soup or a Moroccan-style soup. (Leave out the hot pepper sauce, if desired.) Or use your favorite seasoning blend to make this soup even easier.

 What about dessert? 

Sweet potato-orange slices: (We got this idea from Ann Esselstyn) 

Cut an orange in 4.
Combine sweet potato puree and juice from the orange.
Take the flesh out, so you just have the orange peels.
Put the mixture in your orange peels.
Bake for 10 minutes on a lined cookie sheet at 350.
Sprinkle with pumpkin pie spice and a small amount of maple syrup.

Jeff’s Chocolate Mango Dessert: 

1 Bag Mixed Frozen Berries (Strawberries, Blueberries, Rasberries, Blackberries)
2 Fresh Mango
2 TB Hershey’s Cocoa Powder

2 Tsp Diced WalnutsBlend 1 Mango with 2 TB Cocoa Powder
Arrange Berries in Parfait Glass
Top With Chocolate
Top With Diced Mango
Top With 1 Tsp Diced Walnuts

    I am thankful for parents who have been vegans for 10+ years and have encouraged all of us to live healthfully too.     I’m really grateful for my health. I’ve had issues in the past few years with adrenal fatigue due to stress, low vitamin D, too much caffeine and meat. Of course, at the time, I didn’t know what was wrong with me except for the low vitamin D, so I started with correcting that. Because that minor change made me feel better, aha, what else could I do? So now I’m plant based and the improvement has been astonishing. My skin is clearer, softer; my mind is less frazzled; my GI tract works efficiently; I have more energy. Yeah, I’m grateful that I took action and didn’t fall off the cliff.

    I am thankful that this year my parents and grandmother are making the trip up from Florida to North Carolina to see us for Thanksgiving. I don’t get to see them very often, so I always treasure the times we do have together. Plus, it is always good times when you have 4 generations together in the same room 🙂

    I am thankful that my husband and I are healthier than we were a year ago – both off cholesterol meds and have lost unwanted weight! Great to be an inspiration to some of those around us! – 10 months and counting!!!!

    I am very thankful for my own willingness and determination to drop 99%
    or more of all Dairy, Meats, oils, eggs and caffeine cold turkey on Nov.
    1st 2012. I thank my Mom for giving me the book “The China Study” 3
    years ago and her gentle persistence suggesting I really read it. I
    never actually did read much of it, instead I listened to the book twice
    on my IPod while taking
    nice walks. I’ve already lost 3 inches off my waist and I’m
    re-discovering the joy of cooking food again! And I especially thank my
    wife for her ability to listen, open mindedness and willingness help me
    when I suddenly and
    radically said “No!, I don’t want to be fat and lethargic anymore!” And
    trusted myself to refuse to eat what I knew did not work for me anymore. Thank God and all
    these courageous people out there, many of whom may have had to put everything
    on the line to get this message to us! I will be forever grateful.

    In addition to my wonderful family, I am very thankful that veganism has gone mainstream and it’s so easy and rewarding to do! Just ten years ago, it was difficult finding vegan specialty products and now even regular grocery stores carry them. Yay!

    I am thankful for awareness. I am thankful for the chance to be more mindful and diligent in my garden-growing, getting to know local farmers for the things I don’t grow, sharing the bounty of my garden and food prep with friends who are like-minded and friends who are learning.     I am thankful I am heatlhy enough to have a great morning run, fortunate enough to have great friends to share it wth…and lucky enough to live in a gorgeous city with a great climate…plus i live just a few blocks from Whole Foods and our farmers markets to always be supplied with great food.     I’m thankful that I took the 28 day challenge in September sponsored by the Whole Foods in Sarasota. The clincher was hearing Rip speak at the Whole Foods during my third week of the challenge. I left knowing that this would be more than just a 28 day event, but a new lifestyle. My cholesterol went down 30 pts after 28 days to the lowest I’ve ever seen it. That convinced my parents to hop on board and they are now following the Engine 2 guidelines. Thanks Rip!

    I am thankful for my supportive family, especially my mom who has always had meat and dairy free Thanksgiving side dishes but for the second year in a row has stopped serving tom turkey.     I’m thankful for my health and the health of my husband who recovered marvelously from neurosurgery, much to the astonishment of all medical staff involved (they were shocked at his great blood work beforehand too) and I’m mostly thankful for the Esselstyns, the Novicks, the Nixons, the McDougalls, in fact the whole plant-strong team for imparting their wisdom and passion so freely to help Americans get healthy.     I am always thankful for family, but this year I am very thankful for My Beef with Meat, the Happy Herbivore series of cookbooks, and the first three Jeff Novick Fast Food DVD’s which made our plant strong way of eating so much less stressful. Jeff’s DVD’s, in particular, give the foundation for making cooking and shopping for plant strong eating so easy!
