E2 Foodie Friday: Delicious Green Summer Smoothie

Great way to get your daily greens. Even kids love this!

For One Smoothie:

3 oz frozen mixed berries

1 cup steamed kale (leaves only)

1 tablespoon nut butter of choice

1 handful raw pumpkin seeds

5 oz (vary according to preferred thickness) Coconut Juice or Water

Optional:  add one serving vegan protein powder

    too much fat in nut butter!! i’ll leave that part out. otherwise it sounds good!

    Just a question…why steam the kale? Why not just consume it in it’s raw form? Also, on the coconut “Juice”. How about adding actual coconut water and the coconut flesh…MAN! I find that is deelish in a smoothie!

      We steam the kale so we can fit more in the blender….and have a personal preference on the taste which is less bitter. Good for you for going for it raw! Definitely better in its raw form.

    Made this just now for dinner. I used 1 cup of canned kale (it’s what I had on hand). I don’t know of any young kids who would like the looks of it, but I can guess the brave ones would try it :)

    I call my green smoothie ” My monster green smoothie” and hope that my grandson will find that interesting enough to try a sip, he is a very picky eater! Thanks for the recipe!
