Apple and Kale Soup recipe from Jacquie

In September we hosted a 7 day Engine 2 Immersion for Whole Foods Market employees. In just a few days people were taking charge of their health and changing their lives. Jacquie was one of those people. Click here to watch this video of Jacquie, and then check out her healthy soup recipe!

Apple and Kale soup

4 apples (cut into cubes)

1-2 bunches of kale (remove form stalks, if using stalks chop small)

3 cloves of garlic (chopped)

1 onion (chopped)

2-3 stalks of celery (chopped)

1 teaspoon nutmeg

2 sprigs of rosemary or ½ teaspoon

2 tablespoons of balsamic vinegar

½ container of vegetable broth low sodium

½ pound mushrooms cut (may use more or less to taste)

4-5 cups of water

Salt and pepper to taste

In a pot add onion, garlic, and stalks of kale ( if using), with celery. When they start to cook and soften then add mushrooms. Cook for 5 minutes. Add the vegetable broth and water and bring to a boil. When it starts to boil then add nutmeg balsamic vinegar rosemary and salt and pepper. bring to a slow boil and add kale. When kale changes to a dark green turn dow3n heat and add apples.

Taste broth to make sure it is seasoned to your taste and serve.
