Apple and Kale soup
4 apples (cut into cubes)
1-2 bunches of kale (remove form stalks, if using stalks chop small)
3 cloves of garlic (chopped)
1 onion (chopped)
2-3 stalks of celery (chopped)
1 teaspoon nutmeg
2 sprigs of rosemary or ½ teaspoon
2 tablespoons of balsamic vinegar
½ container of vegetable broth low sodium
½ pound mushrooms cut (may use more or less to taste)
4-5 cups of water
Salt and pepper to taste
In a pot add onion, garlic, and stalks of kale ( if using), with celery. When they start to cook and soften then add mushrooms. Cook for 5 minutes. Add the vegetable broth and water and bring to a boil. When it starts to boil then add nutmeg balsamic vinegar rosemary and salt and pepper. bring to a slow boil and add kale. When kale changes to a dark green turn dow3n heat and add apples.
Taste broth to make sure it is seasoned to your taste and serve.
