Looking for a delicious, simple and nutritious fall inspired dish? This savory stuffed acorn dish is the perfect meal for a fall night or for a holiday feast!
1 acorn squash (medium-large)
1 package Engine 2 Ancient Grain Blend:
*Alternately you can use 2 cups of any mix of whole grains you like.
1 can low sodium chickpeas
1 tbs sage (powder)
1 can pumpkin puree
1 tbs garlic
1/4 cup low sodium vegetable broth
Cook or microwave 1 acorn squash, cut in half, scoop out seeds.
In a large pan add Ancient Grain Blend, rinsed chickpeas, sage and heat all the way through.
In small pan add pumpkin, garlic and low sodium vegetable broth, heat all the way through.
When both grain and bean mixture and pumpkin topping is heated, stuff inside cooked acorn half.
Top with balsamic glaze.
