Plant-Strong Banana Pie

We held a recipe contest to see who could come up with the most creative recipes using our Engine 2 Food line! The results were incredible. Here is plant-strong firefighter, Joel's recipe for banana pie.

E2 Crisp Bread Pie Crust
Directions:
  • Pre-heat oven to 350 degrees. In a blender or food processor add crackers and blend until reduced to a fine powder. Place into a mixing bowl and add remaining DRY ingredients. Whisk dry ingredients well.
  • Add baked and peeled sweet potatoes and mix well by hand. Add almond milk and the rest of the wet ingredients.
  • Mix ingredients by hand until a thick smooth like paste is formed.
  • In a pie pan, place mixture in the middle and press/spread by hand. Press and spread evenly (to desired thickness) and cut remaining crust off the edge of the pan with a sharp knife.
  • Bake for 15 minutes and let cool.
Banana Filling: 
  • 6 ripe/brown spotted bananas
  • 14 ounce container of lite firm tofu
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 tsp almond extract
Directions:
  • In a blender, add bananas and tofu. Blend until smooth
  • When mixture is smooth, add remaining ingredients and blend until evenly mixed
  • Fill cooled pie crust with the banana filling and place in the refrigerator for 1 hour then in the freezer for an additional 45 minutes.
  • Garnish with 70% non-dairy chocolate shavings and a few dashes on cinnamon.
