We held a recipe contest to see who could come up with the most creative recipes using our Engine 2 Food line! The results were incredible. Here is plant-strong firefighter, Joel's recipe for banana pie.
Pre-heat oven to 350 degrees. In a blender or food processor add crackers and blend until reduced to a fine powder. Place into a mixing bowl and add remaining DRY ingredients. Whisk dry ingredients well.
Add baked and peeled sweet potatoes and mix well by hand. Add almond milk and the rest of the wet ingredients.
Mix ingredients by hand until a thick smooth like paste is formed.
In a pie pan, place mixture in the middle and press/spread by hand. Press and spread evenly (to desired thickness) and cut remaining crust off the edge of the pan with a sharp knife.
Bake for 15 minutes and let cool.
6 ripe/brown spotted bananas
14 ounce container of lite firm tofu
1/2 tsp cinnamon
1 tsp vanilla
1/4 tsp almond extract
In a blender, add bananas and tofu. Blend until smooth
When mixture is smooth, add remaining ingredients and blend until evenly mixed
Fill cooled pie crust with the banana filling and place in the refrigerator for 1 hour then in the freezer for an additional 45 minutes.
Garnish with 70% non-dairy chocolate shavings and a few dashes on cinnamon.
