This is a fast meal using our Fiesta Grain Blend, Engine 2 Tortillas and Engine 2 Salsa!
1/2 package Engine 2 Fiesta Blend Grain Medley
1 cup fresh spinach
2 TBS Engine 2 Salsa
1 Engine 2 Ancient Grains or Brown Rice Tortilla
2 slices avocado (optional)
Chili powder (to taste)
Heat up tortilla using a tortilla shell pan.
Bake for 10 minutes on 350.
Heat up Fiesta Blend in a stove top pan or pot, adding a little water as you stir. Cook till heated all the way through.
Take tortillas out of the oven, fill with spinach, Fiesta Grain Blend, top with spinach and a few slices of avocado and top with chili powder.
Ok it looks ands sounds good, but where I live I do not have access to any engine 2 products. There are only 2 small health food stores in my area. I need more info on ingredients, please.
I found this Fiesta Blend on the Whole Foods website (we don’t have Whole Foods here either), and the ingredients list is: ORGANIC BROWN RICE, ORGANIC BLACK BEANS, ORGANIC SWEET CORN, ORGANIC RED BELL PEPPERS, ORGANIC POBLANO PEPPERS.
Shirl hit the nail on the head. Any recipe using anything but standard small town grocery fare is unfair for people in rural areas. When using fancy ingredients break them down to the generic components
That looks YUMMY! I make tortilla chips out of the Engine 2 Ancient grain tortillas ….super easy to make!
I can’t wait to try this recipe but I am going to stuff a bell pepper instead of a tortilla!
