This dish is packed with a symphony of amazing flavors!
1 package Engine 2 Morning Grain Blend:
*alternately you can use 2 cups of cooked farro
1/2 bag frozen cranberries
2 apples (chopped)
1 cup pomegranate seeds
2 tbs maple syrup
1 large kabocha Squash (or 2 smaller sized squashes)
2 tsp cinnamon
1 tsp ground ginger
Cook or microwave kabocha squash.
In a large pan add the following:
1 package morning grain blend
Heat all the way through.
Add maple syrup, ginger and 1 tbs of cinnamon and 1 tbs of ginger
Scoop out seeds of the kabocha squash when it is cooked all the way through
Stuff mixture into squash halves
Dust with generously with cinnamon.
I am getting ready to eat this for dinner. I changed the kabocha squash to purple and orange sweet potatoes. The cranberry mixture is making the house smell divine! Just what we needed this cold February evening.
Just a comment… I haven’t tried this yet, but would love to. I did notice, however, that in the ingredients, it calls for 2 tsp. cinnamon and 1 tsp. ground ginger. In the instructions, it says to add 1 tablespoon cinnamon and 1 tablespoon of ginger. I am guessing the ingredients sound more reasonable. Please clarify. Also, can I use grated ginger, as I have a fresh ginger root in my fridge right now? =) Thank you.
I would think it’s 1 tsp of each and then the other 1 tsp of cinnamon to dust with.
