I am fairly new to this but my husband and I are trying our best to follow the program to a tee. But there were a couple of things that I had a question about. First in the Uncle Sams original cereal I noticed that it has barley malt which is on the list of hidden sugars to watch out for. Second in a couple of the receipies I noticed that they use brown sugar and raw cane sugar. Even Dr. Esselyn had the chocolate walnut cake for his birthday and it has brown sugar in it. So am I to assume that in the case of the cereal and the receipies that the sugar and barley malt are o.k.? Just a little confused. Thanks for the help.

Raw sugar and brown sugar are allowed. You should use them in moderation (nasty words, those!). Just as the desserts in the books are allowed but they should only be treats.

Thank you Cathey that helps with the sugars. But what about the barley malt in the Uncle Sam's cereal? That is one that Rip uses in his big bowl but he also says to watch out for it as a hidden refined sugar in ingredients. Thank you again – I really appreciate your help.

I don't have a box of Uncle Sam's on hand to read the sugar amounts but I think I remember that it is a very small percentage overall. I mix my uncle sam's in with steel cut oats and oatmeal so I was not concerned enough to remember any info. It probably shouldn't be enough to worry about when used in the big bowl.
