Hi everyone, I am Rusty and I am new here.

 

I am 34. I have a family history of heart attacks, which got my attention and I have been looking to start eating healthy to avoid, you know, dying.

 

Never got serious about it until I got Gout, I am a Kitchen Manager at Red Robin so it was awful.  I read that meat and alcohol can cause it.  So I immediatly went vegetarian.  I realized that though it helps with Gout, it is an unheathy way of living.  Then I happened to watch Forks over Knive and it struck a chord.  Mind you this all happened in a 2 week span.  

 

I have been a hardcore meat eater my whole life.  I was even on the Atkins diet for 3 years and loved it.  Suprisingly being a vegetarian has been very easy.  So I decided to be heathly and bought the E2 book and a few others and want to try the 28 day challenge.

 

Problems I will face are I work at a burger joint (we sell gluten free buns and boca burgers, and have an array of veggies/lettuce) and I work 60 hours a week in this enviorment.   I live in a small town with 3 very small health food grocery stores that are mainly pill stores.  So variety is a challenge.  Even our farmers markets are more geared towards crafts.  I can get by but to make this a lifestyle change I will need to get creative.   

 

I am planning on starting next Wednesday as I am long time coffee drinker and plan on going hardcore and will need a few days off work to get over caffeine withdrawls.  I was hoping you folks would have advice to help me be successful with my stiuation.

You can get most of what you will need at the regular grocery store, even Walmart. Things like nutritional yeast can be ordered online or might be at you health pill stores. You have to be careful at Red Robin as the boca burgers there have egg and possibly cheese in them. You can eat the salad veggies for sure.

I would recommend baking a bunch of potatoes in foil and taking a couple to work everyday. Have a reheated baked potato with lemon juice or vinegar on it with a big salad made up of the good things available to you. Bake some garbanzo beans ala Happy Herbivore and take in a baggie to throw a handful on your salad. Do your cooking in a big whack on your day off to have everything on hand to just grab and go.

You can do it! Read in past posts about other ideas and Rip's blog has had some quick and easy meal ideas lately also.

Hey Rusty.

I'm with ya. We have a lot in common.

Like I told someone else, I suggest learning to love beans. Beans are filling, full of protien and versatile with lots of varieties. 

Try several varieties until you know which ones you liike and which grains you like to mix with them. Experiment with several bean varieties, combinations with grains (corn, quinoa, rice, barley) and spices. 

Soon, you will develop several "go-to" combinations of beans with veggies and grains. Then, you can just pop it in the microwave when you're at work and have a healthy low fat tasty filling meal. And, you can flavor them in a million different ways: southwest style, Indian or just plain old sea salt (very lightly of course) and pepper. 

I bought a pressure cooker and love it. 

As far as giving up coffee goes, try switching to tea and then ween yourself off of caffeine completely over time. 

Going plant based is very doable and even enjoyable after a while. It just takes a lot of learning and experimenting at the beginning to figure out what you like and what you can do. Then, over time, it will seem like a whole new culinary world has opened up to you. I was a devoted meat eater and grill master. Now, I love being plant based and discover new foods every day.

So, in the first few weeks when you're feeling discouraged, just remember it takes time and you will soon develop a plant based savvy. When that happens, you will never look back.

Hang in there! It gets better.

Rusty, congrats on making the change!  I as well grew up a hardcore meat-eater and have only been vegan since September. I also have a horrible family health history and Forks over Knives sealed the deal for me to.  It's probably been said, but it gets easier each day that passes.  For me, losing weight was and continues to be a huge motivating factor to keep pushing. 

Without a doubt being from a small town will force you to get creative in terms of finding quality vegan foods but it can be done!  I would recommend eating as many salads as you can while at work but no doubt that it is going to be a tough environment.  I am also a huge fan of juicing.  I have two big green juices a day and I find that those keep me going for most of the day.

Been a week so far and it has been a ton easier than I had thought, I am learning a whole lot and learning a new way to eat and cook already.

 

I will not give up coffee though.  I just cant but besides that I am doing good, even being around burgers all day I have found plant based items at work that keep me going.  

 

Thankt for the advice so far, it has been great.
