Hey All,
I'm very new to this diet and I'm trying to ease myself in to eating vegan. I love the idea of a vegan lasagna but I am not too crazy about sweet potatoes. Anyone know if it would be good with regular potatoes or have a suggestion for a substitute? Let me know what you think, I would love to make this!

You sure could try the lasagna with regular potatoes. Also, as you get rid of the nasty stuff in your diet, your tastes will change and you may start to like sweet potatoes, as well as other previously unliked things. It took a good year and a half for me to start liking sweet potatoes, bell peppers and guacamole. Now, I can even eat peppers raw, mind you, I vastly prefer them cooked. Huge changes are in store for you. Tastes broaden and expand. It is wonderful. But until they do, just avoid those things you don't like or try to disguise them in other things.

Thanks for the info! I do hope that my tastes change because I know sweet potatoes are so good for you!

Hi all! (first post here)!! Just started this eating plan – I won't even call it a diet because I think of it more as a choice for lifestyle and health that I will never change! Been on the "plan" for 5 days, have lost 4 pounds, and feel better than I have in years. Plus, I love the food! Just was wondering if anyone has tried to substitute sweet potatoes for regular potatoes and how it worked out? I am also not a fan of sweet potatoes, and I have guests coming this weekend. I was thinking of making this recipe since it is such a hit! I don't want to be the only one not eating it, so if anyone has tried it with any sweet potato alternatives, please let me know. THANKS!!!

You could probably use squash like acorn or butternut. But they have a similar taste to sweet potatoes. You could also try a different lasagna recipe like the ones at happy herbivore or fatfreevegan.

Hi,
What a coincidence. I just made the e2 lasagna tonight. I have to tell you that I was dissapointed. I didn't think it had much taste. I don't like sweet potatoes and probably should have eliminated them from the dish. The flavor and consistancy just don't seem to go with the other ingredients. This may not be the case if you're a big fan though. Shame, it's a very healthy dish.
I have seen recipes calling for hash browns in the e2 book. I wonder if that would be a suitible substitute. I also wonder if anyone else has played with this recipe? What about black olives? Is there anything else that can zest this up a little?
I don't know, maybe it's asking a little much to make lasagna without cheese.

I find that I always have to up the spices in a recipe for my tastes, that helps a lot. I did it with the sweet tato lasanga too and liked it. I wouldn't use sweet potatoes next time if you don't like them. Try the hash browns but make sure they don't have oil added, lots do.

Have you ever seen the white skin sweet potatoes? They are shaped like sweet potatoes but the skin is a very light color almost like white potatoes. My husband swore he hated sweet potatoes. I served this and he thought it was a very sweet irish potato. Now I cook them all the time. They're hard to find but here in Arizona I find them at Albertsons.
