I had Kale for the first time today. I've been meaning to add more greens to my diet for a while and finally picked up a big bag of chopped kale at the grocery store yesterday. I figured if nothing else, I'd figure out how to eat and cook it instead of letting it go to waste. So I just made a big raw kale & romaine salad with 1/2 cup of corn kernels and some grape tomatoes. For a dressing I mixed rice vinegar with Bragg's liquid amino and some spicy brown mustard. With a side of rice & beans it made a pretty good meal. I liked the salad so much I might have another one later.
Now my question, and I do have one, is what are some good ways to fix kale that don't require a lot of prep work. Can it be steamed in the microwave? I have a stove, but because of the way things are set up I have to carry everything upstairs to cook on it, which is a pain.

Hi Carl!
You can definitely steam it in the microwave. I add it to spaghetti sauces, lasagna, curries, etc. Any dish where you add vegetables, you can add kale. Some people even make kale chips! Cut the kale, lightly salt it and put it in the oven. The water bakes out and the kale becomes crispy with no oil. It takes more time but is really fun to eat.
Here is a recipe. Just eliminate the oil.

Oh! Just shove some kale in your blender with some water and a banana and other fruit and blend, blend, blend!!!
Any thing (just about) green can go into a green smoothie. That's the fastest and easiest way to get your greens. If you are not too sure about the 'green' taste , spinach in mild in flavor (as is kale) and start with alittle greens and alot of fruit and continue with other greens like romain and even collards, beet tops… Evenutally you will be craving your green smoothie. Crazy I know, but it is true!

Try the Kale "butter" in the E2 book. I made it last night for the first time and its awesome! Really simple to make too.

I have black kale coming out the ears. I am going to try the chips and the kale butter. Thanks both of you for the reminders! I might even try out the kale smoothie even though I am not a big smoothie fan.

Eat the stems everybody! They are loaded with vitamins and have great fiber benifits.
Kale is extremly important. Enjoy!

Well, I tried the kale chips. Just the opposite of yummy for me, I was so disappointed! I hope the kale butter turns out to be more to my taste.

I browned the Kale chips too long. They came out more like burnt kale crumbles, not appetizing. I may try it again with a little Pam spray and some spices.
Kale steamed in the microwave turned out better. I put a couple tablespoons of water in a glass casserole dish, filled it full of chopped kale, and mw'd it for 3.5 minutes. The kale came out lightly steamed. I added a couple splashes of sodium-free rice vinegar and am enjoying it as I type.
I'll try the kale butter as soon as I can remember to pick up the walnuts.

Just got this recipe from the Whole Foods site and tried it last night. The wife and I loved it! I ate it over Quinoa and also put some in Eziekel Tortillas. Give it a try.
| Kale, Carrots, & Avocado Salad |

| 1 bunch curly kale, stemmed and finely chopped |
|
|
|
|
|
|
|
| 2 cups grated carrots |
|
|
|
|
|
|
|
|
|
|
| 1/2 avocado, peeled and pitted |
|
|
|
|
|
|
|
|
|
| 1/4 cup thinly sliced red onion |
|
|
|
|
|
|
|
|
|
| 2 tablespoons lemon or lime juice |
|
|
|
|
|
|
|
|
| 2 tablespoons sesame seeds, toasted |
|
|
|
|
|
|
|
|
| 1/2 teaspoon reduced sodium soy sauce |

I cook kale on the stovetop with low-sodim V8 (have you _seen_ the sodium count in he normal stuff???) and salsa or rotel tomatoes. Spicy & yummy.
