I take my lunch to work each day, and because of my busy schedule, end up eating it in my truck or while I am driving from job to job.  I have been making a sandwich of wheat roast, lettuce, tomatoes, veganase, and bread.  I like the combination of foods, but after a year of the same thing I am getting a little board.  Any ideas for a new sandwich would be greatly appreciated!

Do you eat nut butters?

How about something similar in a pita or a rollup? In the pita, you sould add beans, bean paste or hummus. Or cook some chick peas in a pressure cooker and fry them in a pan with just a tiny bit of oil for the pan, spice them up and put them in a pita pouch.

Chris – we like to make chickpea spread (like hummus minus the tahini), it's great.  If you like 'spicy' it is also fun to spice up your veganaise with some Rooster(Sriracha sauce).  I also like the 'mock egg salad' (I think maybe Happy Herbivore?).  Whole Foods has a WONDERFUL (but also Wonderfully Expensive – haha) MOCK chicken salad.  But I figure, hey, we're not buying steaks anymore, I'll drop $12. on a large container of this that will make 6-8 good sized wraps or more during the week.  I served the mock chicken salad to my non-vegan sister and brother-in-law and they loved it so much that they buy it now INSTEAD of chicken salad.  Lock-n-Lock brand makes a cool 'wrap' container.  My husband even takes them out on the golf course Laugh.

My favorite vegan sandwich is actually a wrap I get at a local health food store. It has black beans, quinoa, lettuce, carrots, cucumbers, sprouts and a little veganaise. Sometimes I get hummus added to it.

I make a nice mock tuna salad using chickpeas in place of tuna. Makes a great wrap or sandwich..let find the recipe and I will post it. :)  Also, I take Rip's rice salad recipe and wrap it in a ww tortilla with letttuce and tomato…excellent!

I love sammiches! Here are some of my favourites:

 

I always use wholegrain bread, so let's just take that as a given.

 

1) Dry-fried smoked tofu, sliced tomato, tonnes o' spinach, and ripe avocado spread over the bread in place of veganaise.

 

2) Almond butter and jam OR almond butter and a bit of maple syrup.

 

3) Pesto (basil, parsley, sun-dried tomato – endless possibilities, really; I think there's a basic recipe for oil-free pesto in one of the Essylstyn books that can easily be riffed off of) + thinly sliced zucchini and cucumber.

 

4) Hummus and thinly sliced kale and sweet red peppers.

 

5) steamed tempeh crumbled, mixed with some diced celery, onion, pickle, parsley, mustard, soy sauce, garlic, and veganaise.

 

6) grated carrot mixed with tahini, nutritional yeast, veganaise and sliced green onion.

 

All this talk of sammiched is making me hungry.

I just make a different spread every weekend, chop up any veggies left from night before, tons of greens, wrap it and go! also E2 salsa minus the pepper (I'm a wimp about spice) with black bean azuki chips. If the pantry is empty I'll use regular bread, tahini and agave (like a PBJ)

One thing that I've come to really love are bean burritos.

 

I'll cook up a batch of black beans and mash them up in a bowl, put them in a whole grain tortila, with onions, green peppers, jalapenos (for an extra kick), and salsa.

 

Taste great and reallly filling.

I eat tomato, sprout, sweet onion on Ezekiel bread with FF Veganaise and spicy brown mustard, and on those days that I want a more substancial sandwich I'll add some brown rice or some yam slices to the sandwich.  Also, I take an Ezekiel pita, and stuff it with hummus, home made baked falafel, tomatoes, diced cucumber and soy yogurt tzatziki-that is a great sandwich!

 

Also, Dr McDougal has vegan soup in a cup that you just add water to.  They are in Whole Foods and Sprout markets, flavors such as Split Pea, Tortilla Soup, Tamale, Black Bean, Thai Noodles.  I love all of these, I even eat them sometimes for dinner, and they are great for road trips if you bring your own hot water thermos or can order hot water at a restaurant.  There are also McDougall soups in the brick form that don't need water or refrigeration. 

You could also bring your own thermos of home made soup to work.  In fact most of the time I eat home made soups for lunch if I'm not having a sandwich.  My favorites are tortilla soup and split pea soup.
