In case you haven't tried it, this is from the Prevent and Reverse Heart Disease book by Caldwell Esselstyn.  It is SO good!  I use Ortalli balsamic vinegar, Inglehoffer mustard, and agave syrup.  The "parts" are by volume, eg, tablespoons.  My husband loves this!

3 parts vinegar

2 parts prepared mustard

1 part maple (or agave) syrup

( I also add 1.5 parts water)

Mix and dig in!

I agree it is yummy!  I shared this once with some non-plant people at work and they loved it.

Hi All, I tried this salad dressing using low sodium ketchup instead of the maple syrup.  I didn't have any syrup on hand and needed to make a dressing.  I don't know how it compares with the maple syrup, but I'm really liking the 3-2-1 with 3 balsamic vinegar, 2 mustard, 1 ketchup.
