I want to make the dark chocolate brownies today, but I'm confused by the cocoa powder. The ingredients call for 3/4 cups cocoa powder, then a few ingredients later, it calls for 1-1/2 cups 60% (or greater) cocoa powder. First, I could not find a cocoa powder that listed the percentage (at Whole Foods), but assumed that if cocoa powder was the only ingredient, it must be 100%. Second, is there a difference between the two ingredients? I'm thinking there must be or else the recipe would call for 2-1/4 cups of cocoa powder rather than listing them separately. I'm just not sure what the difference is. Thanks for any help you can give me.

you've probably figured this out already, since you posted your question in may! but i reviewed the recipe and the 1st reference 3/4 c. cocoa powder, 2d reference for 60% or more is for chocolate chips or chocolate chunks. so essentially, you'll be using chocolate in two different forms — cocoa powder, and chips or chunks.
i'd love to try this recipe, but i am shocked to see how much sugar is used in this recipe! does anyone know of substitute?

Yes. There's a typo in the Kindle edition of the book. I figured it out after I bought a hard copy. I haven't made the brownies, but I did have them when Rip came to Reno. The food they serve at his appearances is amazing and these brownies were no exception!
