1/2 bag Black beans
1/2 bag red beans
1/2 bag lentils
32 Oz box organic vegetable stock
4 large ribs celery (diced)
4 large carrots (diced)
1 large onion (diced)
2 to 6 cloves garlic minced. I like garlic……A LOT
Salt and Pepper
Give the beans a soak with your preferred method
Place Celery, carrots, onion, and garlic in large crock pot. Place in soaked beans. Pour stock to cover. If needed you can use a little of the bean soaking water to make up the difference. Cook on high for about 4 hours.
I put half of this in the freezer and the other half in the fridge. I have been serving this warmed up on the side as a protien.
Topped with a little salsa takes it to another level.
