I just have to share my lunch idea!

I made mayo yesterday so wanted to have a sandwich but wanted more that mayo and veggies. Hummus called to me but had to make it. Had garbanzos cooked already, whipped up some mag garlicky hummus. What would taste really good? Carmelized mushrooms and onions!

Carmelize 1/4 onion and about 4 decent sized mushrooms until beautiful.

Toast 4 slices whole wheat bread

Spread one slice with thick layer of hummus and the other with mayo and stone ground mustard

Put half of the onions/mushrooms on a slice, top with fresh spinach, sprouts and lettuce.

Enjoy!!!

You could also grill these minus the fresh lettuce and add after done.

That sounds wonderful!  How do you make your mayo?  I have been missing Mayo since I started this diet.  Thanks! Gillian

Here is the recipe for low fat mayo that I use. I modified the original to my tastes. I think it may have come from a recipe on vegweb.

Low Fat Mayo

 

Ingredients
1/2 cup cashews
2 cups water
5 tablespoons corn starch
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon dry mustard
dash paprika
1 lime juiced
2 teaspoons rice syrup
2 tablespoons apple cider vinegar
Directions:
Blend together until smooth the cashews, water, and corn starch. Pour into pan and heat until very thick. Place pan into ice bath to cool. Place plastic wrap right on the top of the mixture after slightly cooled. I just stick the whole pan into the freezer after covering until cool. When thoroughly cooled, return to blender and add remaining ingredients. This sounds like a bit of work but is well worth it and tastes as close to veganaise as original author has been able to come.
Preparation time: 15 minutes
